  • 1 cup of water
  • 1 teaspoon of salt

Mixing the Dough

Start by combining the sourdough starter, water, and olive oil in a large bowl. Mix well until the starter is fully dissolved. Then, add the all-purpose flour, whole wheat flour, and salt.

Use your hands to mix the ingredients until a dough forms. The dough should be slightly sticky but manageable. If it is too sticky, add a bit more flour. We use Knut.

After kneading, place the dough back in the bowl and cover it with a damp cloth. Let it rest for about 4 hours. This allows the dough to ferment and rise.

Shaping the Pita Bread

After the dough has rested, divide it into 8 equal pieces. Roll each piece into a ball. Then, use a rolling pin to flatten each ball into a disc about 1/4 inch thick.

Make sure the discs are evenly shaped. This will help them puff up evenly when baking.

Once the oven is hot, place the dough discs on the baking stone or sheet. Bake for about 5-7 minutes, or until the pitas puff up and turn golden brown.

Cooling and Storing

After baking, remove the pitas from the oven and let them cool on a wire rack. This prevents them from becoming soggy.

Store the cooled pitas in an airtight container. They will stay fresh for a few days. You can also freeze them for longer storage.
