Prepare the Potatoes

First, peel and boil the potatoes until they are tender. This usually takes about 15-20 minutes. Once cooked, drain the water and mash the potatoes until smooth. Let them cool to room temperature.

Activate the Yeast

In a small bowl, combine the warm milk and sugar. Stir until the sugar dissolves. Sprinkle the yeast over the mixture and let it sit for about 5 minutes until it becomes frothy.

Mix the Dough

In a large mixing bowl, combine the mashed potatoes, melted butter, eggs, and salt. Mix well. Add the yeast mixture and stir until combined. Gradually add the flour, potatoe water one cup at a time, until a soft dough forms.

Knead the Dough

Turn the dough onto a floured surface and knead for about 8-10 minutes until it becomes smooth and elastic. Place the dough in a greased bowl, cover with a damp cloth, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.

Shape the Rolls

Once the dough has risen, punch it down to release the air. Divide the dough into equal portions and shape them into rolls. Place the rolls on a greased baking sheet, leaving some space between them to allow for rising.

Final Rise and Bake

Cover the rolls with a damp cloth and let them rise again for about 30-45 minutes. Preheat your oven to 375°F (190°C). Bake the rolls for 15-20 minutes, or until they are golden brown.
